These no-bake paleo holiday fig cookies are packed with flavor and they’re good for you, too!
We get it. It’s busy during the holiday season, the last thing you want to do is spend a lot of time over a hot oven after all of that Christmas shopping.
If you’re in need of a quick, healthy dessert for your family or an office party, these paleo cookies are perfect! Created by our own Caveman Chef, Dave Kenney, these no-bake fig cookies will take your Santa cookie plate game to the next level.
Try these amazing no-bake paleo holiday fig cookies. With only five ingredients, these are ready in no time flat.
Paleo No-Bake Holiday Fig Cookies
- Rolling pin
- Wax paper
- Cookie Cutters
- 2 cups dried turkish figs
- 2 cups shredded coconut
- ⅓ cup coconut oil
- Pinch of sea salt
- ¼ tsp cinnamon
- Place the figs and 1 ½ cups shredded coconut, coconut oil sea salt and cinnamon in a food processor. Pulse the ingredients until well incorporated, while scraping down the sides.
- Place a piece of wax paper on a cookie sheet, dust with ½ the remaining coconut. Place mixture on paper and press out evenly. Dust with remaining coconut, cover with wax paper and use a rolling pin to spread evenly. Refrigerate for 30 minutes
- Remove from fridge, peel back wax paper and cut into your favorite christmas shapes. You can repeat step two to utilize and leftover pieces or make into energy bites. Refrigerate for up to a week
