Classic Keto Egg Salad
Classic egg salad with a twist makes this the perfect Keto meal. This recipe calls for avocados and eggs, which are both delicious, nutritious and foods that easily fit into your macros.
- 6 eggs
- 1 Tbs Butter
- 1 Med. Avocado optional
- 1/3 Cup Mayonnaise
- 1 Tsp Dijon Mustard
- ½ cup sour cream
- dash cayenne pepper
- 1 tbsp olive oil
- 1½ tbsp lemon juice
- 1 Tsp. dried Dill optional
- salt and pepper to taste
Cover the eggs with water in a saucepan. Bring to a boil, turn the heat off, cover and rest in hot water for 10-15 minutes. (more or less based on preference)
Run under cold water and peel shells
Chop the eggs into small pieces, sprinkle with salt and pepper, set aside
In a medium bowl, mix mayo, butter, eggs, mashed avocado (optional), mustard, lemon juice and choice of herbs (dill works wonderfully!)
Chill for 30 mins to 1 hr. and serve
